Anise Cookies

Ingredients

  • 3 large eggs, room temp
  • 2 1/2 cup A/P flour
  • 1 cup sugar
  • 1 Tbsp + 1/2 tsp baking powder
  • 1/2 cup butter, softened
  • 1 Tbsp anise extract, or more
  • 1 tsp vanilla
  • icing:
  • 1 1/2 cup powder sugar
  • 3 Tbsp heavy cream
  • 1/2 tsp whole milk
  • 1/2 tsp anise extract
  • 1 drop any food coloring
  • white nonpareils

Preparation

Step 1

Preheat oven to 350 degrees F. In a large mixer, beat the eggs until foamy, set aside. In the bowl of a stand mixer, with paddle, combine flour, sugar and baking powder. Mix on low speed and gradually add in the butter and extracts, until mix resembles crumbs.

Step 2

Add in the eggs and mix until stiff dough forms. Roll about 1 rounded tsp of dough into balls and place 2 inches apart on an uncreased 13x18 baking sheet. Bake 10-12 minutes. Cookies will slightly crack on top. Transfer to a wire rack to cool completely.

Step 3

Make the icing: In a small bowl, mix together the powder sugar, heavy cream, milk, extract and food coloring. Spoon over the cookies and allow to dry completely
