Cod with hearty tomato sauce

You can make this with the sauce recipe. OR you can use classic homemade tomato sauce

Ingredients

  • 2 cans diced tomatoes with italian seasonings, undrained (14and 1/2 oz)
  • 4 cod fillets (6oz each)
  • 2 Tbsp olive oil, divided
  • 2 med white onions, halved and thinly sliced (about 1-1 1/2 cups)
  • 1/2 tsp dried oregano
  • 1/4 tsp pepper
  • 1/4 tsp crushed red pepper flake
  • minced fresh parsley, optional

Preparation

Step 1

Place the tomatoes in a blender. Cover and process until pureed. Pat the fish dry with paper towels

Step 2

In a large skillet, heat 1 Tbsp oil over medium-high heat. Add the cod fillets. Cook until surface of fish begins to color, 2-4 minutes on each side. Remove from pan

Step 3

In the same skillet, heat remaining oil over medium-high heat. Add onions and cook and stir until tender, 2-3 minutes. Stir in seasonings and pureed tomatoes and bring to a boil. Add the cod; return just to a boil, spooning sauce over tops. Reduce the heat and simmer uncovered, until the fish just begins to flake easily with a fork, 5-7 minutes.
