Braised Belgian Endive

Ingredients

  • 4 thin slices prosciutto
  • 2 T butter
  • 1 T olive oil
  • 2 cloves garlic minced
  • 4 heads Belgian endive halved
  • 1/4 c apple cider vinegar
  • 1/2 c or 2 oz shredded Gruyere cheese
  • 1/2 c toasted chopped walnuts
  • 1 T chopped fresh rosemary

Preparation

Step 1

Heat skillet over medium. Add prosciutto. Cook 3-4 minutes or until crisp, turning once. Remove; crumble when cool. In same skillet, melt butter and heat oil over medium-high. Add garlic; cook and stir 1 minute. Add endive, cook 3-5 minutes or until brown, turning occasionally. Add vinegar, 1/4 t salt and 1/4 t pepper. Cover lightly with lid.

Step 2

Reduce heat. Cook 10-15 minutes or until tip of knife inserts easily into endive. Uncover; sprinkle with cheese. Turn off heat. Let stand, covered, 5 minutes or until cheese melts. Sprinkle prosciutto, walnuts and rosemary over endive.
