Ingredients
- 3 c water
- 1 c farro rinsed and drained
- 4 slices bacon
- 5 oz baby kale
- 1 1/2 c sweet cherries pitted
- 1/4 c red wine vinegar
- 1 t coarse grain mustard
- 2 oz sliced or crumbled blue cheese
Preparation
Step 1
In a medium saucepan bring 3 cups water and the farro to boiling; reduce heat. Cover; simmer.
Step 2
Meanwhile, in a large skillet, cook bacon over medium until browned and crisp. Transfer to paper towel. Reserve drippings in the skillet. Add kale by the handful, cooking and stirring until each addition is wilted. Remove from heat and stir in farro, bacon, cherries, 1/2 t salt and 1/4 t pepper.
Step 3
For dressing: In a small bowl whisk together vinegar, 3 T olive oil, the mustard, 1/2 t salt and 1/4 t pepper. Add to mixture and toss. Top with blue cheese.
