Ingredients
- 3 Tilapia Filets
- 1 Can Diced Tomatoes and Chiles
- 1 Can Petit Diced Tomatoes
- 1 Medium Sweet Vidalia Onion, thin sliced
- 1/4 Cup Capers (Drained)
- 3 TBS Olive or Avacado Oil
- 12 TBS Butter
- 1 tsp dry oregano
- Salt
- Black Pepper
Preparation
Step 1
Add 2 TBS Olive or Avacado Oil to frying pan on medium high heat
Step 2
Salt and pepper 1 side of each filet and add to hot oil and butter, salt/pepper side down. Add salt and pepper to top side of filet
Step 3
Fry until brown on one side (5-7 minutes) and flip to other side until brown (if on medium high heat with thick filet the center may not be flaky, that's ok) pull fillets and set aside
Step 4
add remaining Olive/Avacado Oil and butter. When butter is melted and begins to bubble add onions and sautee on medium high until onions wilt
Step 5
Add both cans of tomatoes, capers and oregano. Reduce heat and simmer until liquid is reduced by 1/2
Step 6
Add back fillets, cover with tomatoes and simmer until reheated and center of filet is flaky.
Step 7
Serve over pasta or rice
