Southern Baked Bean Stew

I improvised on the ingredients so with my alterations, the dish was a smash!

Ingredients

  • 1 lb dried navy beans (but I used 1 can brown beans and 1 can black beans for color and variety and consistency
  • 2/3 lb ground beef
  • 1/2 lb. bacon cut into small pieces
  • 1 large onion diced
  • 1-2 green peppers, diced
  • 1/2 cup brown sugar
  • 1 can diced tomatoes
  • 2 tablespoons Worchestershire sauce
  • 1 tsp cayenne pepper
  • 3 tablespoons Dijon mustard
  • 1/2 cup molasses
  • 2 cups beef stock or water
  • 1 tsp sale
  • 1 tsp black pepper
  • 1 C. Tennessee Whiskey (or not, depending)

Preparation

Step 1

Preheat oven to 300°F. Chop all vegetables. In an oven-safe casserole dish or large cooking pot, place the diced bacon and cook gently until bacon has released its fat and begins to crisp up. Leave drippings.

Step 2

Add the ground beef and break it up as it cooks, cooking in the bacon drippings. Add everything in the pot with the beef and bacon. Stir it gently together.

Step 3

Add 1/2 cup whiskey and stir in. Cover the pot and place in the oven for about 2 hours. After 2 hours, taste for flavorings. Add the black pepper and any other seasonings to taste.
