Beef Stew

Ingredients

  • 1/4 cup flour
  • 1/4 teaspoon pepper
  • 1 lb. stew meat
  • 5 teaspoon oil
  • 2 tablespoons red wine vinegar
  • 1 cup red wine
  • 3 1/2 cup beef broth
  • 2 bay leaves
  • 1 medium onion
  • 5 medium carrots
  • 2 large baking potatoes
  • 2 teaspoon salt

Preparation

Step 1

Combine flour & pepper i bowl. Add beef and toss to coat well. Heat 3 teaspoon oil in pot. Add beef & brown, cooking in batches, adding oil as needed.

Step 2

Remove beef from pot. Add vinegar & wine. Cook over medium-high heat, scrap pot to loosen brown bits. Add beef, beef broth, and bay leaves. Bring to a bowl and then reduce to simmer.

Step 3

Cook approximately 1-1/2 hours until beef is tender. Add onions and carrots and simmer 10 minutes covered. Add potatoes and simmer 30 minutes covered until vegetables are tender. Add broth/water as needed.
