Chicken Enchilada Soup in crockpot

Made this up as I went along. Turned out pretty good.

Ingredients
- 4 -6 chicken breasts cooked or grilled
- 1 can yellow corn
- 1 can light red kidney beans
- 1 large can black beans
- 1 chopped yellow onion
- 1 28oz can petit chopped tomatoes
- 1 14 oz can enchilada sauce
- 1 48oz can chicken broth
- 2 cups water
- 1 Tbsp garlic powder
- 1 Tbsp chili powder
- 1 Tbsp cumin
- 2 Tbsp dried parsley flakes
- 2 cans original Rotel tomatoes
- salt and pepper to taste
- 1 envelope taco seasoning
- GARNISH: top with any or all of the following...
- Corn tortillas strips
- chopped avocado
- shredded cheddar cheese
- sour cream
- green onions
Preparation
Step 1
Chop chicken breasts and put in crockpot along with all other ingredients except those for garnish. Cook on High for 4 hours.
Step 2
serve and enjoy
