Shrimp Scampi

Ingredients

  • 2 pounds uncooked jumbo shrimp, peeled and deveined
  • 6 vine-ripened tomatoes, diced
  • 6 garlic cloves, chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 pound cooked angel hair pasta or spaghetti for serving

Preparation

Step 1

Use a 4-quart slow cooker. In a large bowl,
combine the shrimp, tomatoes, garlic, salt, and
pepper. Stir or toss to fully distribute the
ingredients. Spread a length of aluminum foil or
parchment paper onto your kitchen countertop
and place the shrimp mixture into the center.
Fold the foil or paper over and crimp the edges
to make one fully enclosed packet. Place this
packet into the insert. Cover and cook on High
for 2 hours, or until the shrimp is tender. Serve
tossed with the hot, fresh pasta.
