Creamy Italian Chicken

I try to stay away from recipes that use too many packaged ingredients, but do love the convenience of salad dressing mixes. When on sale, I stock up and keep quite a few varieties on hand for a last-minute dip or dinner. Serve over pasta or rice.

Ingredients

  • 3 pounds boneless, skinless chicken breast or thighs
  • 1 (8-ounce) package cream cheese, softened
  • 1/4 cup warm water
  • 1 (0.7-ounce) package Italian salad dressing mix
  • 1 (14.5-ounce) can fire-roasted tomatoes

Preparation

Step 1

Use a 4- or 6-quart slow cooker. Place the
chicken in the insert. In a small mixing bowl,
whisk together the softened cream cheese,
water, and salad dressing mix to create a sauce.
Pour the sauce evenly over the top of the
chicken and add the fire-roasted tomatoes.

Step 2

Cover and cook on Low for 6 to 7 hours or on
High for about 4 hours. Stir before serving.
