Ingredients
- 1/2 head cauliflower, cut into florets
- 1 Tbsp EVOO
- Salt
- Pepper
- 1/2 cup unsweetened, full-fat coconut milk
- 2 Tbsp peanut butter (no added sugar PB)
- 1/4 tsp red curry paste
- 1 garlic clove, minced
Preparation
Step 1
Preheat oven to 400. On baking sheet, arrange cauliflower in single layer. Drizzle with olive oil, season with salt & pepper. Roast for 20 minutes, until edges are brown.
Step 2
While cauliflower is cooking, in a blender, combine coconut milk, peanut butter, curry paste, and garlic. Process until smooth.
Step 3
Once cauliflower is finished, divide between 2 plates and drizzle peanut sauce on top.
