Caramel Puff Corn

Ingredients

  • 2 packages (6 or 7 oz.) butter flavored Puffcorn (I use MikeSells brand)
  • 2 sticks butter (1 salted/ 1 unsalted)
  • 1 cup brown sugar
  • 1/2 cup corn syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Preparation

Step 1

Preheat oven to 250 degrees.
Place package of popcorn in a large roasting pan
In a medium sized pan combine butter, brown sugar and corn syrup. Bring to a boil and continue boiling for 2 minutes; stirring constantly.

Remove from burner and add baking soda and vanilla to hot mixture. Be careful it will bubble up fast. Pour over the puffcorn and mix well.

Bake @ 250 for 45 minutes; stirring every 15 minutes.
Spread onto cookie sheets to cool. Break apart and store.
