Ingredients
- 1/2 pound orzo
- dressing:
- 1/4 cup fresh dill
- salt and pepper
- 1/3 cup mayo
- 3 T white wine
- 2 1/2 t dijon mustard
- 2 T lemon juice with zest
- 1/2 cup chopped roasted red pepper
- 2 minced green onions
- 1/2 lb cooked shrimp
Preparation
Step 1
cook orzo according to directions and drain.
stir in 2 T olive oil.
Step 2
make dressing and combine with orzo and refrigerate sev hours, stir occasionally
Step 3
then add bottom ingredients and stir
keeps well in frig for a few days. can substitute cooked salmon that has been broken up
