Ingredients
- 1 1/2 lbs Brussels sprouts trimmed and halved or quartered
- 2 tbsp olive oil divided
- Salt and pepper to taste
- 1 lb. trimmed green beans
- One 6 ounce pkg. fried onions like French's
- 4 tbsp. butter
- 2 tbsp. minced fresh garlic
- 4 tbsp. flour
- 2 cups whole milk
- 1 cup chicken broth
- 1 cup grated Parmesan
Preparation
Step 1
Preheat over to 450 with a baking sheet inside.
Step 2
Toss sprouts with 1 tablespoon oil; season with salt and pepper. Transfer sprouts to preheated baking sheet and roast 5 minutes. Toss beans with remaining 1 tablespoon oil and season with salt and pepper. Add beans to the baking sheet and roast until sprouts and beans are fork-tender, 15 minutes more.
Step 3
Toast friend onions on a separate baking sheet until golden, 3 to 5 minutes.
Step 4
Melt butter in a sauce pan over medium heat; add garlic and cook until fragrant, 1 minutes. Increase heat to medium-high; whisk in flour and cook 1 minute.
Step 5
Whisk in milk and broth; bring to a boil. Reduce heat to low and simmer sauce until it thickens, 5 minutes. Stir in Parmesan; season sauce with salt and pepper.
Step 6
Toss sprouts and beans with sauce and onions.
