Squash & Curried Noodle Soup

Ingredients

  • 2 lb. peeled and cut in 1" cubes
  • 8 oz. Lo Mein Noodled
  • 1 1/2 tsp. curry powder
  • 1/2 tsp. turmeric powder
  • 4 cups reduced sodium chicken or vegetable broth
  • 14 oz. can unsweetened coconut milk
  • 6 oz. fresh spinach
  • 2 limes

Preparation

Step 1

Bring large pot of salted water to boil. Add squash, reduce heat to medium. Simmer covered 5 mins. Add noodles, simmer uncovered 4-6 mins. or till noodles al dente. Set aside.

Step 2

In same pot heat 1 vegetable oil over medium high heat, add spices, cook and stir 1 min. Add broth and milk, bring to boil. Stir in noodles and squash, return to boil, stir in spinach, season with S&P. Remove from heat and stir in juice from 1 lime. Cut remaining lime into wedges to serve with soup.
