Ingredients
- 3/4 tsp. rosemary
- 1/4 tsp. basil
- 1/2 tsp. thyme
- S&P to taste
- 4 lamb chops (3/4" thick)
- 1 T EVOO
- 1/4 cup minced shallots
- 1/3 cup balsamic vinegar
- 3/4 cup chicken broth
- 1 T butter
Preparation
Step 1
mix seasoning and rub mixture onto lamp chops both sides. Place on plate, cover and set aside 15 mins to absorb flavors.
Step 2
Heat oil in large skillet, place chops and cook 4 mins per side for medium rare or more as desired doneness. Remove from skillet and keep warm.
Step 3
Add shallots to skillet and cook 2 mins or till browned. Stir in vinegar, scraping bits of lamp from bottom., then stir in broth. Continue to cook over med high heat for 5 mins until sauce is reduced by half. Important. Remove from heat and add butter. Pour over lamb and serve.
