Spinach Artichoke Dip 2

Ingredients

  • 1 T EVOO
  • 1 garlic clove finely chopped
  • 12 oz. fresh spinach
  • pinch of red pepper
  • S&P
  • 14oz can quartered artichoke hearts, drained and coarsely chopped
  • 8 oz pkg. cream cheese cut into 1" pieces
  • 4 oz. mozzarella shredded
  • 4 oz. sour cream
  • 1/4 cup grated cheese

Preparation

Step 1

Cook garlic in oil 30 seconds. Add spinach a bunch at a time, wilting after each bunch. Add red pepper and S&P. Continue cooking until spinach has evaporated (no liquid) about 3 mins. Add artichokes, season with more S&P, cook a few minutes to take the raw edge of artichokes.

Step 2

Reduce heat to low and add cream cheese and mozzarella and stir till melted. Stir in sour cream and grated cheese. Season with more S&P.

Step 3

You can eat this right out of the pan or broil till crispy by transferring to ovenproof pan, about 5-8 mins till bubbly.
