Ozark Mountain Breakfast Casserole

Ingredients

  • 4 eggs, beaten
  • 1 cup milk
  • 1 cup grated pepper jack cheese, plus more for topping
  • 1/2 lb cooked sausage
  • 6 green onions, finely minced
  • 4 roma tomatoes, seeds removed and chopped
  • 1 (4 oz) can green chilies, do not drain
  • 1 (8.5 oz) box Jiffy cornbread mix
  • 1 teaspoon black kettle seasoning

Preparation

Step 1

Beat the eggs, stir in milk and cornbread mix. Lightly stir in the rest of the ingredients. Pour into an 8x8 greased baking dish. Bake at 350 for 40 minutes. Remove from oven and add pepper jack cheese on top. Bake for an additional 10-15 minutes until cheese is bubbly.

Serve with sour cream and/or salsa.
