spelt banana bread w/ plums

Ingredients

  • 150 g spelt flour
  • 50 g buckwheat flour
  • 110 g soft butter
  • 2 ripe bananas
  • 2 eggs, in room temperature
  • 2 tsp baking powder
  • 1 tsp of: cinnamon, cardamom, ginger
  • 450 g plums
  • 2 dark chocolate (99%) bar squares
  • Few almonds and walnuts, chopped

Preparation

Step 1

Pre-heat the oven to 180 degrees.
Beat the butter for around 1 minute, add eggs and beat a little bit more.
Smash bananas with fork and add to the dough and mix them. Add flours with baking powder and spices. Mix until combined.
Add diced plums (but leave around 5 of them and put them aside!). Add half of the nuts.
Put the dough into the baking mould lined with baking paper. On the top put the rest of the plums, cut into eights, diced chocolate and the rest of the nuts.
Bake around 50 min. in 180 degrees.
