Ingredients

  • 1 lb. lean ground beef
  • 2 garlic cloves, crushed
  • 1 small onion, coarsely chopped
  • 1 each large red and green bell peppers, coarsely chopped
  • 1 cup butternut squash, peeled and coarsely chopped
  • 1 package 910 oz) frozen corn
  • 2 cans (14.5 oz each) tomatoes
  • 1 can (15 oz) chili hot beans
  • 1 can (14 oz) beef broth
  • 1 1/2 t chili powder
  • 1 t ground cumin

Preparation

Step 1

Brown the ground beef in a Dutch oven or small stockpot, stirring until crumbly; drain. Add the garlic, onion, bell peppers and squash and mix well. Stir in corn, tomatoes, beans, broth, chili powder and cumin. Simmer for 30 minutes.
