Ingredients

  • 2 pears, cored, peeled and cut in 1/4" slices
  • 1 1/4 c sugar, divided
  • 1 c walnuts
  • 3/4 c margarine
  • 1/2 c packed brown sugar
  • 3/4 c egg beaters
  • 2 tsp. vanilla
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 c water
  • 1 c almond milk

Step 1

spray 8" round cake pan
cream margarine, brown sugar and 1/4 c sugar, add egg beaters and vanilla to mix. add flour, baking soda and baking powder with approximately 1 c almond milk, maybe more to make a pouring batter. meanwhile put 1 c sugar and 1/2 c water in skillet to boil. lower heat and simmer until light amber. add 1/2 c nuts and cook 30 seconds more. pour over arranged pear slices in a circular pattern in pan. then top with cake batter. bake 350 for approximately 42 minutes. unmold onto a plate immediately after baking.
