Ingredients

  • 2

    pears, cored, peeled and cut in ¼" slices

  • c sugar, divided

  • 1

    c walnuts

  • ¾

    c margarine

  • ½

    c packed brown sugar

  • ¾

    c egg beaters

  • 2

    tsp. vanilla

  • tsp baking powder

  • ½

    tsp baking soda

  • ½

    c water

  • 1

    c almond milk

Directions

spray 8" round cake pan cream margarine, brown sugar and 1/4 c sugar, add egg beaters and vanilla to mix. add flour, baking soda and baking powder with approximately 1 c almond milk, maybe more to make a pouring batter. meanwhile put 1 c sugar and 1/2 c water in skillet to boil. lower heat and simmer until light amber. add 1/2 c nuts and cook 30 seconds more. pour over arranged pear slices in a circular pattern in pan. then top with cake batter. bake 350 for approximately 42 minutes. unmold onto a plate immediately after baking.
