cups heavy cream
tablespoons butter or margarine
tablespoons all purpose flour
cups (8 ounces) grated fresh Parmesan cheese
salt and ground white pepper to taste
(16 ounce) package pasta, cooked according to package directions
Combine milk and cream in saucepan. Heat until warm, about 120 degrees , do not boil. Melt butter in another saucepan, whisk flour into butter until smooth. Add heated milk and cream all at once to butter mixture and continue to whisk. Simmer for 5 minutes or until sauce is slightly thickened; stirring constantly. Remove from heat and whisk in Parmesan cheese, salt and pepper. Toss with hot pasta and serve immediately.
