Pecan Catfish

A favorite fish entree!

Ingredients

  • 1 Pound catfish fillets
  • Vegetable oil spray
  • 2 Tablespoons olive oil
  • 1 Tablespoon Cajun seasoning
  • 2 Teaspoons lemon juice
  • 1 Teaspoon thyme leaves
  • 1/3 Cup chopped pecans
  • 2 Tablespoons grated
  • Parmesan cheese
  • 1 Tablespoon dry bread crumbs
  • 1 Tablespoon chopped parsley

Preparation

Step 1


Heat oven to 425°F. Coat baking pan with cooking spray. Place fish in pan. Combine all ingredients is a small bowl. Spoon over the fish fillets spreading evenly. Bake for 10 to 15 minutes.
