Summer Squash Saute

Ingredients

  • 1-2 yellow squash, sliced thick
  • 1 onion, diced
  • 1 tomato, cut into chunks
  • 2-3 Tbsp. butter
  • 2 Tbsp. Parmesan cheese
  • 1.4 tea. garlic salt or sandwich sprinkle
  • 1/4 tea. thyme (optional)

Preparation

Step 1

Saute squash and onion in butter until LIGHTLY browned, 3 minutes or so. Add the tomato, cheese, garlic salt and thyme (if using). Cover and cook until tender, about 5 minutes or until the vegetables reach the desired tenderness. You can add more of any ingredient depending on your taste.
