Ingredients

  • 4 T. minced garlic
  • 2 Cups chopped onion
  • 1 T olive oil
  • 5 chopped boneless skinless chicken breasts
  • 1 t. cumin
  • 1 t. oregano
  • 1/4 t. cayenne pepper
  • 2 chicken bouillon cubes
  • enough water for your desired consistency
  • 3 16oz. Cans great northern beans
  • 1 4oz. Can chopped mild green chilies

Preparation

Step 1

Place all ingredients (except garlic, chicken, onion and olive oil) into a soup pot. Simmer on low heat. Stir fry onion garlic and chicken in oil until chicken is cooked through. Add chicken mixture to soup pot and let chili simmer for at least 30 minutes. Don’t allow to boil. Garnish with sour cream, chopped green onions and grated cheese. Serve with corn bread. (I like it crumbled on top!)
