Ingredients
- 1/2 cup dried cranberries
- 3 chopped apples
- 1/2 cup walnuts
- 2 stalks chopped celery
- 2 chopped carrots
- 1 cup quinoa
- 1/3 cup Tofurti sour cream (optional)
- 2 tbsp lemon juice
- pinch of salt and fresh ground pepper
Preparation
Step 1
cook quinoa and cool
mix in with dry ingredients
mix sour cream and lemon juice
toss dressing into salad
