Cajun Black Beans

I know there is no such thing, but this is a great side dish for Jambalaya.

Ingredients
- 1 can (28 oz) black beans with liquid
- 1 medium sweet onion chopped
- 2 tbs minced garlic
- 1/4 tsp cayenne
- 1/2 tsp cumin
- 1/4 tsp Cajun spice (optional, I don't normally use it)
- 1 tbs EVOO

Preparation
Step 1
1. In a medium sauce pan heat EVOO and add onion and garlic. Saute' until onion is clear and garlic is fragrant.
2. Add all spices and mix with onion and garlic
3. Add beans and liquid. simmer uncovered stirring frequently
4. when beans begin to soften take 1/4 of the beans and mash with a fork or blend and add back to the pot to thicken.
Service as a side.
