Sauteed Zucchini with Basil and Olive Oil

Ingredients

  • 1/4 cup olive oil
  • 2 1/2 lbs zucchini, cut into 2 inch long pieces, then 1/2 x 1/2 strips
  • 1/2 cup thinly sliced fresh basil

Preparation

Step 1

Heat oil in a large skillet over high heat. Add zucchini and saute until crisp tender, about 5 minutes. Transfer to large bowl. Toss with basil. Season to taste with salt and pepper and serve.
