Ingredients

  • 1 C raw chshews
  • 2 T raw pine nuts
  • 1 1/2 C water
  • 4 t fresh lemon juice
  • 1 t minced garlic
  • 1/16 t ground nutmeg
  • 1 1/2 t salt
  • 1/2 t pepper
  • 4 C cooked fettuccine
  • 3 T minced parsley

Step 1

In a blender, grind cashews and pine nuts into a fine powder. Add water, lemon juice, harlic, nutmeg and salt. Blend until smooth.

Transfer sauce to a small saucepan over med heat and whisk as you bring to a boil. Reduce heat to low and simmer for 7 min, whisking regularly. Stir in pepper.

Serve over hot pasta and garnish with parsley and pepper to taste.
