Step 1
Pour the turkey or chicken pan drippings into a 2 cup measuring cup and skim the fat off. Put about 1/4 cup of the fat into a saucepan and stir in 1/4 cup of flour (all purpose). Add enough water to the drippings (throw the rest of the fat away) to make 2 cups of liquid. Pour the 2 cups of liquid into the flour/fat mixture. Cook, stirring, until thickened and bubbling. Cook for about 1 minute, stirring. Add salt and pepper to taste.

Oh my my my! Can you hear me say that ""I am ecstatic""? I so totally love this. The only thing I did differently was to four-ple it (okay, I know it is quadruple). I might three-ple it next time to use that 2 c. sauce for some stuffing juice. But for now? I'm in love.
The Best (and Easiest) Gravy I've Ever Made! I've tried for a decade to make my Mom's turkey gravy, but mine always came out too thin...or just not right! I LOVE this recipe...my gravy finally came out super and tasty! It's so easy to do and worth the few extra minutes of skimming the fat over just adding water to a dry envelope mix. YUMMY! It's a keeper at my house!
My first attempt ever at making gravy, I substituted Wondra gravy flour for standard flour. The gravy came out every bit as good as my Mom used to make! Thanks for a great and simple recipe!
