Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 3/4 cup margarine or butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups zucchini, shredded
  • 1 cup coconut
  • 3/4 cup walnuts, chopped

Preparation

Step 1

1. Generously grease a 15 x 10 x 1 baking pan.

2. In a small mixing bowl stir together flour and baking powder; set aside.

3. In a large mixer bowl beat margarine or butter with an electric mixer on medium speed for 30 seconds. Add surars; beat till fluffy. Add eggs and vanilla; beat well. Stir in flour mixture. Stir in zucchini, coconut, and nuts. Spread evenly in prepared pan.

4. Bake in 350 * oven about 30 minutes or till a toothpick inserted near center comes out clean. Cool completely in pan on wire rack
