cup whole wheat flour
cup finely chopped parsley (1 whole cup if using mint extract instead of mint leaves)
cup finely chopped mint or ¼ tsp mint extract
Tbsp vegetable oil
Mix together ingredients in a large bowl or food processor. Mix together until it forms a thick dough (dough may look flakey). Roll on floured board or counter top. The thinner it's rolled, the more crispy the treats will become. Preheat oven to 350 degrees and lay treats on ungreased cookie sheet. (Put aluminum foil on cookie sheet for easier clean up.) Bake 20 minutes or until golden brown. Thicker treats may retain springy feel.
