New Orleans Onion Soup

Ingredients

  • 5 T sweet butter
  • 5 onions, sliced
  • 3 T. Oil
  • 1 # beef bones
  • 1 clove garlic, minced
  • 2 quarts of water
  • 1/2 C dry white wine
  • 8 rounds French bread
  • 1 C grated Swiss cheese
  • salt and pepper to taste

Preparation

Step 1

Saute onions in butter to a light brown. Transfer to slow cooker. Brown beef bones in skillet, then transfer to cooker. Add garlic, water, and wine. Cook on low for 6 hours.

Place bread rounds on baking sheet and cover generously with cheese. Place in hot oven until cheese melts. Float the bread/cheese on the soup when serving.
