Ingredients
- 2 C flour
- 2 C sugar
- Pinch of salt
- 1 tsp vanilla
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1 tsp cinnamon
- 4 Eggs
- 1 Cup oil
- 3 Cups shredded carrots

Preparation
Step 1
Mix together all dry ingredients. Add carrots, oil, eggs. Mix until moistened. Beat at medium speed 2 minutes.
Bake in a greased 9x13 pan @325 oven for 50 to 60 minutes.
Cream Cheese Frosting
1 - 3oz cream cheese
1/4 C butter
2 C powdered sugar
1 tsp. Vanilla
¼ CUP CHOPPED PECANS
Soften & beat together cream cheese & butter. Slowly add powdered sugar, stir in vanilla.
Spread on cooled cake & sprinkle nuts on top.
