Ingredients

    C flour

  • 2

    C sugar

  • Pinch of salt

    tsp vanilla

  • 1

    tsp Baking powder

  • 1

    tsp Baking soda

  • 1

    tsp cinnamon

  • 4

    Eggs

  • 1

    Cup oil

  • 3

    Cups shredded carrots

Directions

Mix together all dry ingredients. Add carrots, oil, eggs. Mix until moistened. Beat at medium speed 2 minutes. Bake in a greased 9x13 pan @325 oven for 50 to 60 minutes. Cream Cheese Frosting 1 - 3oz cream cheese 1/4 C butter 2 C powdered sugar 1 tsp. Vanilla ¼ CUP CHOPPED PECANS Soften & beat together cream cheese & butter. Slowly add powdered sugar, stir in vanilla. Spread on cooled cake & sprinkle nuts on top.
