cups grated green zucchini with skin
tsp. baking soda
tsp. baking powder
cup vegetable oil
Chop walnuts into medium pieces, combine with raisins and set aside. Combine dry ingredients and set aside. Beat eggs, gradually beat in sugar, then oil and add flour mixture alternating with zucchini. Stir in raisins, walnuts, and vanilla. Place into 2 greased and lightly floured 9 x 5 bread pans. Bake on lowest rack at 350 degrees for about 55 minutes. Place onto wire rack to cool. If desired, loaves may be lightly glazed with confectioner's sugar or topped with a little cream cheese. Freezes well.
