Ingredients
- 1 lemon
- 1 orange
- 1/4 C sugar
- 1/4 C water
- 1 C raspberries, blackberries, blueberries, or sliced strawberries
Preparation
Step 1
With peeler, remove 1 strip of peel from lemon and orange. Squeeze 1 T. of juice from each.
In 1 qt. saucepan, combine lemon peel, orange peel, sugar & water. Heat to boiling over high heat. Reduce heat to low; add berries and simmer, uncovered for 5 minutes. Remove pan from the heat. Let stand until cool, about 30 minutes. Remove & discard lemon and orange peel.
In blender, pulse berry mixture until pureed. Pour into sieve over bowl to remove seeds. Stir in orange and lemon juices. Cover and refrigerate until cold.
Serve over ice cream, yogurt, fresh fruit, pancakes, or mix with seltzer for a refreshing cooler.
