    C fresh strawberries, halved

    C sugar, divided

  • ½

    C plus 2 T flour, divided

  • 1

    T lemon juice

  • t baking powder

  • t baking soda

  • t salt

  • 3

    T non hydrogenated vegetable shortening


Preheat oven to 375 degrees. coat 11 x 7 in baking dish with cooking spray. Toss together strawberries, 1/2 C plus 2 T sugar, 2 T flour and lemon juice in bowl. Transfer to prepared baking dish. Whisk together remaining 1/2 C flour, remaining 2 T sugar, baking powder, baking soda and salt in separate bowl. Add shortening and mix well with fork until mixture is crumbly. Stir in 1/2 C water. spread over strawberry mixture. Bake 20-30 min or until browned and bubbly. Let stand 10 min before serving. Can be refrigerated for 2 days. Serve warm or at room temperature.
