Ingredients
- 4 boneless, skinless breasts, quartered (this can be cooked the night before)
- 1 can chicken broth (or homemade chicken stock)
- 8 oz sour cream
- 8 slices Swiss cheese or 2 cups shredded mozzarella cheese
- 15 Ritz crackers, crushed or 2 cups seasoned bread crumbs
- 1/2 cup Country Crock margarine
Preparation
Step 1
Preheat oven to 350°.
Next, in a large skillet, sauté chicken breasts in 2 tablespoons oil. Do not cook until all the way done. Only cook until both sides are white and the inside is still pink.
Transfer chicken to a 9×13 un-greased baking pan. Arrange breasts in pan so the entire bottom is covered.
Layer chicken breasts with Swiss cheese and spread with sour cream on top.
Now, sprinkle crackers or breadcrumbs. Pour chicken broth all over the top of the breadcrumbs.
Then, spread the margarine on top of the crumbs.
Bake for 30 minutes or until chicken is no longer pink and the topping is golden brown.
