Ingredients

  • 1 (14 oz) can salmon
  • 1 clove of garlic, minced
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped celery
  • 3 tablespoons butter
  • 1 cup wild rice
  • 1 cup chopped carrots
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon thyme
  • 1/2 cup frozen peas
  • 1 (14 oz) can creamstyle corn
  • 1 (12 oz) can evaporated skim milk - I use coconut milk

Preparation

Step 1

Saute the garlic, onion, green pepper and celery in the butter. Stir in the rice, carrots, reserved salmon liquid, chicken broth, salt, pepper and thyme. Simmer, covered for 20 minutes or until the vegetables are nearly tender. Add the peas; simmer for 5 minutes. Stir in the corn, evaporated milk and salmon. Cook until heated through.
