Potatoe Soup

  • 5 - 6 potatoes, peeled and cut into large bite size pieces
  • 3 - 4 T. finely chopped onion
  • 2 - 2 1/2 c. milk
  • 1/2 c. cubed Velvetta cheese


Servings 4


Step 1

Place potatoes and onion in pan, cover with water. Bring to boil, cover with lid. Crack lid so it will not boil over. Reduce heat to med low. Cook for approx 15-20 minutes. You want potatoes to be done but still very firm. Drain most of water, leave a very small amount still in pan. Add milk, salt and pepper to taste. Add cheese and heat on low until cheese is melted. Stirring gently, will scorch very easily.
