Skillet Potatoes

Ingredients

  • 6 medium potatoes, washed and thinly sliced
  • 1/2 cup vegetable oil
  • 1 large onion, thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Preparation

Step 1

Fill a medium saucepan three-quarters full with water and bring to a boil over high heat. Add potatoes and cook for 10 to 12 minutes, or until fork-tender; drain and set aside.

In a large skillet, heat the oil over medium-high heat. Add the sliced onions and saute for 5 to 6 minutes, or until they start to brown.

Add the potatoes, salt and pepper to the skillet; mix well and cook for 15 to 17 minutes, or until potatoes are golden, turning occasionally.
