Blondies are famously unfussy but remarkably delicious. They lend themselves to plenty of adaptations, including this iced, strawberry-filled one.

Ingredients

  • Strawberry Icing:
  • 1 cup (250 mL) butter, softened
  • 2-1/2 cups (625 mL) packed brown sugar
  • 4 eggs
  • 1 tbsp (15 mL) vanilla
  • 2-1/2 cups (625 mL) all-purpose flour
  • 1/4 tsp (1 mL) salt
  • 1 cup (250 mL) strawberry jam
  • 1/2 cup (125 mL) butter, softened
  • 1-3/4 cups (425 mL) icing sugar
  • 1/4 cup (60 mL) strawberry jam
  • 1/2 tsp (2 mL) vanilla

Step 1

In large bowl, beat butter with brown sugar until fluffy; beat in eggs, 1 at a time. Beat in vanilla. Whisk flour with salt; stir into butter mixture in 2 additions. Spread half of the batter in parchment paper–lined 13- x 9-inch (3 L) baking dish; smooth top.

Microwave jam on high until melted, about 30 seconds. Drizzle over batter; spread evenly. Top with remaining batter; smooth top. Bake in 325ºF (160ºC) oven until tester inserted in centre comes out clean, 35 to 40 minutes. Let cool in pan on rack.

Strawberry Icing: In bowl, beat butter with icing sugar until fluffy; stir in jam and vanilla. Spread over blondies. Transfer to cutting board; cut into bars.
