White Chicken Chili (Risha Hargrave)

Ingredients

  • 1 lb boneless chicken breasts, cooked and shredded
  • 1/2 cup onions, chopped
  • 3 cloves fresh garlic, minced 2 Tbsp. Olive Oil
  • 48 oz. jar White Northern Beans(not drained)
  • 3 cups Monterey Jack Cheese, shredded
  • 1 15 oz can chicken broth
  • 1 can Rotel tomatoes
  • 1 tsp ground cumin
  • 1/4 tsp ground red pepper
  • 1 small can diced green chili's ( not drained)
  • 1 pint sour cream

Preparation

Step 1

Cook chicken and shread. In small skillet, sautee onions and garlic in olive oil until transparent, not browned. Add remaining ingredients except cheese and sour cream and simmer in soup pan or crock pot for 1 hour or until heated through. Add cheese and sour cream when ready to serve.
