Teriyaki Meatloaf

Ingredients

  • 3/4 cup stir-fry sauce, such Kikkoman
  • 1/2 cup orange juice
  • 2 slices white bread, torn into 3/4" pieces
  • 2 lbs. ground beef
  • 2 eggs, beaten
  • 2 scallions, chopped, 1/2 cup
  • 1 tsp. grated orange zest

Preparation

Step 1

Preheat oven to 350 degrees. In small bowl, combine 1/4 cup stir-fry sauce and 1 Tbs. orange juice; reserve. In large bowl, toss bread pieces with remaining orange juice; let stand until softened, about 5 minutes.

To bowl with bread, add, eggs, scallions, orange zest and remaining 1/2 cup stir fry sauce; gently mix until blended. In 13x9" baking pan, shape meat mixture into 11x4" loaf. Bake meatloaf 1 hour or until no longer pink in center, brushing with reserved stir-fry sauce mixture during last 10 minutes of baking time. Let stand 10 minutes before slicing.

Serve with mashed potatoes or rice and vegetables.
