Ingredients
- 6 boneless skinless chicken breast halves
- 1 cup all purpose flour
- 1 tsp kosher salt
- 1 tsp freshly ground pepper
- 2 extra large eggs
- 1-1/4 cups seasoned bread crumbs
- 1/2 cup freshly grated Parmesan cheese plus extra for servings
- Unsalted butter
Preparation
Step 1
Pound breasts until they are 1/4 inch thick.
Combine flour, salt and pepper in a shallow bowl. In another bowl combine and beat eggs with 1 tbs. water. In another bowl combine the bread crumbs and 1/2 cup of grated cheese. Coat the chicken with the flour, dip into egg mixture, then dredge in bread crumb-cheese mixture, pressing lightly.
Heat 1 tbs of butter and 1 tbs olive oil in large pan and cook 2-3 chicken breasts on med-low heat for 2-3 minutes on each side until cooked through. Add more butter/oil as needed and cook rest of chicken.
