  • 3 chicken breast(s) uncooked boneless skinless 2 cup(s) fat-free reduced-sodium chicken broth
  • 8 item(s) small low fat biscuit(s), prepared from refrigerated dough
  • 1 cup(s) uncooked carrot(s)

Preparation

Step 1

Place chicken breasts in large pot, cover with water, bring to boil, let simmer until tender and breaks apart easily. Drain and cut up chicken, should shred easily. Place back in pot and pour broth, add 2-3 cups water and carrots. Let cook until carrots are soft. I add parsley flakes, low sodium salt and pepper to taste. After carrots are soft, bring ingredients to a boil and take refrigerated low fat canned biscuits (small ones-not grands), Take each one, break into 3-4 pieces and roll into a ball. Place them in boiling pot with other other ingredients, takes about 3 mins. to cook biscuit dough. You can also do this with turkey breast.Makes 8-1 cup servings.

Notes

This is a family favorite, takes about 45 mins. to prepare and very hearty. You can use frozen sliced carrots. Also good with 1/2 cup baby peas in recipe.
