Curley Maple Restaurant Muffins

Unfortunately I cannot take credit for these delicious applesauce muffins. This came from an old Taste of Home magazine where someone had written in for this muffin recipe that they had tried at a restaurant called Curly Maple Restaurant. These are perfectly moist and kids will gobble them up.
Ingredients
- 1 1/2 cups sugar
- 1/2 cup butter, softened
- 2 eggs
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 cup applesauce
Preparation
Step 1
In mixing bowl, cream sugar and butter.
Add eggs, one at a time, beating well after each addition.
Combine dry ingredients and add to creamed mixture alternately with applesauce. Mix just until combined.
Fill greased or paper lined muffin cups 2/3 full.
Bake at 350 for 20-25 minutes. Makes 12 muffins

Oh, YUM!! These are fantastic! I made mine with rhubarb sauce instead of applesauce (just rhubarb cooked down with a little bit of sugar) and they turned out terrific! I reduced the sugar to 1 1/4 cups, and think I'd even go to 1 cup next time, since there is sugar in my rhubarb sauce and the muffins were sweet enough. I also omitted the cloves, since I wasn't sure if this would taste as good with the rhubarb. The muffins were moist and tasty. And usually this isn't the case, but I think they were even better hours later! I think I'll try making them into a loaf next time. Thanks for a great recipe!

These muffins were absolutely fabulous! I added some vanilla flavoring and nutmeg. I made them again this morning and used a cup of sugar and reduced the butter by 3 tablespoons and added 3 more tablespoons of applesauce instead. My DH said they tasted just as good. Oh, I also used one cup wheat flour and one cup white flour.
Great recipe! We don't eat muffins much but DH loves quick loaves, so I made them into a loaf, with apple trim along the top. Wow, is it good!! I baked it for about 1 hour and 10 minutes, kind of a nice crisp crust and lovely moist inside and sooo tasty! My applesauce was blueberry-deliciously spiced. Thanks for posting I will be making this again!!
A very nice applesauce muffin, I used 1 cup of sugar because my applesauce was already sweetened. I added 1/2 cup chopped pecans, 1/4 teaspoon nutmeg and sprinkled the unbaked muffins with cane sugar. Good easy recipe!
Just pulled these out of the oven. The smell is amazing and the taste is even better. I made this exactly as stated and I would highly recommend. Each of the spices works well together and does not overpower anything. Will definitely make these again.
Delicious.The only thing I did different is up the spices a bit. Will make again for sure.
These are sooooo good!!!! I made them for my son's class on Apple Day. I ate 3 before they cooled. I did not use the cloves added nutmeg and vanilla. hope the kids like them as much as me. thanks for the recipe.
