Ingredients
- 12.5 oz tomato soup
- 1/3 C. water
- 1/4 lb. dices tomatoes, drained
- 1/8 C. parslet, frsh, minced
- 1/4 Tbs. Italian seasoning mixture
- 5 4oz. salmon fillets
- salt and pepper as needed
- 1 lb. linguini, cooked
- 1/4 C. olive oil
- 1 C. fresh parsley minced
- parmesan cheese
Preparation
Step 1
In large pot mix tomato soup, water, tomatoes, parsley and Italian seasonings; bring to low boil. Reduce heat and keep warm.
Spay and preheat grill.
Spray and season each salmon fillet with cooking spray and grill salmon 4 min. per side or until fish flakes easily when tested with a fork and internal temp in 165*.
To serve: toss hot cooked linguini with 1Tbs. olive oil, add 2Tbs. fresh parsley. Plate topped with 4oz. hot tomato sauce. Top with pepper, salt and parmesan cheese as desired.
